In its simplest form Okayu is rice and water seasoned with salt. Toppings such as negi, minced salmon, nori and ginger may also be added. A soup such as miso
or chicken stock can be used in place of water. Okayu is considered a
good food to eat when you're sick. People over 90 or under 2 years of
age also tend to eat plenty of okayu.
