Hiroshima Okonomiyaki

The Hiroshima version of Okonomiyaki savory pancakes that are usually associated with Osaka. The Hiroshima style has a thin layer of batter on top and a thick layer of cabbage and yakisoba noodles in the middle. It's common for customers to cook their own pancakes at Okonomiyaki restaurants. However, Hiroshima Okonomiyaki are more difficult to prepare and are usually cooked by a chef on a grill in front of customers.
